In this case, I suspect it was just lack of awareness of Booki and the
writers' familiarity with Google Docs which caused that particular tool
choice.

If the content license is suitable (it is under CC BY-SA 2.5), I see no
reason why the book couldn't have a new home at flossmanuals.net. We
could even make it available as a printed book through Sourcefabric if
the authors were agreeable to that.
