David Humphrey,  who is inolved at http://teachingopensource.org ,

Open Source Instruction at Seneca College ( http://zenit.senecac.on.ca/wiki/index.php/Main_Page )

And Mozilla education efforts   ( http://education.mozilla.org )

would be a good person to hook up with.  David is on vacation and 
off-line for the next 2 weeks,  but I've cc'ed him.
